On Aug 27, 2005, I catered my first large Wetdown for the Cedar Grove Fire Department, performed at the Cedar Grove Elk's Club.   On the menu was a 100lb pig, 300 Burgers/300 Hot Dogs/70lbs of Pork shoulders/90lbs of Top round of beef/80lbs of salads/Chips.    We estimate that 350 people were fed.     All my equipment was in play:   Both cargo trailers, both roasters, and a few extra pickup trucks.   A total of 8 staff were present to insure a reasonably smooth food flow.     The event came off without a hitch, thanks in part to the helpful members of the Cedar Grove FD, the Elks Club, and of course the Illustrious EPPO staff.    Click on http://www.eddiesportablepigout.com/panoramasm.jpg for a 3MB panorama shot of the foodservice zone.    Click on http://www.eddiesportablepigout.com/meat.jpg for a pic of the larger roaster packed full of pork/beef.
