EDDIE'S PORTABLE PIG-OUT: 

Final Coordination:

 

 

-Have We told you exactly when we'll arrive?    Will you or somebody be there?   Awake, Dressed?

 

-Do We Have Proper Directions?    Anything special we need to know about Mapquest Directions or GPS Directions?    Delays in transit can easily blow "presentation time".

 

-Have you provided a monitored phone/cell phone number in case we get lost on the way?  

 

-Have you Thought about EPPO's Parking Needs and Logistics?        Please see Logistic Pictures Page for a good look at what's coming your way.

-Unless previously arranged, all services are performed at or near the gate of the trailer. 

-We're arriving usually with a full sized pickup truck or van and a cargo trailer.   We need to park on a reasonably flat, level surface, with plenty of space to facilitate the setup.    

-No greater than 100ft from a potable water source and 100 ft. from electric source (Please check services for functionality before my arrival).  Water is critical.  Electric Critical for early season/late season jobs (when darkness impacts the initial setup, serving, or load out).   

-Are all vehicle maneuvering obstructions removed? (Cars in YOUR driveway, Cars directly across from the Driveway?) 

-Are there other special logistical concerns?      Very steep driveway aprons can force us to perform all services in the street.  

-Be advised, Sometimes staff arrives in a separate vehicle and need to park too.. 

-Please have all Low Hanging Branches over driveways trimmed back.   Our Trucks will not be scratched or dented to support your job.

 

-Are we aware of any Headcount Changes?    (Do you have enough food??)

 

-Please remember to provide at least one full sized banquet table to facilitate leftover placement upon our departure.    It's also helpful to provide a 3 or 4 active steamtables to facilitate leftover handling.  (An option is to have available refrigerator space, or iced cooler space..). Some serving utensils such as Tongs & Spoons, and your own paper products/plasticware also help, if the food's gonna stay out.

 

-If you've selected the option to provide the tables/expendables:   Please Click "servingtable.htm" for details on what's expected.    Please click on "steamtable.htm" for detailed direction on the use of Steamtables..

 

-EPPO does not support "Host Provided Foods".    If you plan to serve your own foods, please set it up at tables placed AWAY from the EPPO work zone.    Please remember to provide your own Steamtables, serving utensils, paperware and plasticware.   No equipment will be loaned for this purpose.

 

-Host-Provided Onsite Assistant?    Do You Have a Person Identified?   This is the person who does the light work of moving pans from the carving area to the steamtables at the serving area.  About 25 minutes.  (Not always required at every Roast.   I should've discussed this with you, if I needed it.)

 

-Will You have Your Pets (and Children) under control?   Pets represent a grave danger to us, and are not allowed in the food service area at any time.   Operations will be ceased until pets are removed.  Continued pet problems will force termination of services.    Please control your pets so we don't have to "deal with the awkward situation".

 

-What's Your Rain Back-Up Plans?   Rain Happens.  Are you prepared?  Do you have a better location lined up? Garage cleaned out?   We request that the client covers the Food Serving lines with professional party canopies, staked in to be windproof.    Please see Inclement Weather discussion at the bottom of Logistic Pictures Page for a good look at proper preparation for rainy situations.    We deploy one 10'x10' EZ-UP canopy over the roaster for free.    Any EPPO Canopies placed over the food line are billed at $70.00 each. 

 

-At the end of the roast, do you have a spot pre-selected for Safe Charcoal Disposal?      We need to carry to the spot, burry it, and douse with water, so preference is close proximity to where we were working, but far enough away from the party so the ash does not drift.    If you don't have a scrubby spot in the corner of the lot, then your best bet is to purchase a galvanized garbage can for charcoal placement.    The can won't get ruined. 

 

-At the end of the roast, do you have any specific instructions for the placement of 3 or 4 very large garbage bags?   You probably don't want to leave outside for the critters to get into.  Garages work best.
