PIG-ROAST PACKAGES TO LARGER CROWDS

This page specifically focuses on Pig Roast Packages/Pricing for Larger crowds (125ppl-225ppl).     The Standard Pig Roast pricing pages are based on packages that can be run from one truck/trailer/crew, supporting crowds up to 125ppl.    When the headcount starts to swell beyond that, serious consideration must be given to having additional pig roasters/trailer/truck onsite.   This forces another towing vehicle, a second trailer, more manpower, and an overall larger logistical footprint.  (Packages subject to the availability of enough manpower and apparatus, of course).    Since jobs in the 125-225ppl range have been popping up more and more, I've decided to standardize some pricing.    Larger jobs need to be custom built though.    More discussion on jobs to "Very Large Headcounts" can be found HERE.

 

Generally, there are 4 aspects that combine to influence the final price of your event:  Menu, Distance, Onsite Logistics, and Inclement Weather.   In-depth discussions about onsite Logistics and Inclement Weather (including images) can be found "here".  Included are images of the "footprint" of smaller packages.   Obviously for larger headcounts forcing additional apparatus, the footprint becomes even bigger!      At the very bottom of the page is a discussion\disclaimer about headcount approximations as it relates to food poundage, denoted by "***".   Please click over to the Standard Pig Roast pricing pages for additional pricing tweaks (mileage, logistics, menu additions, etc).

 

LARGER HEADCOUNT PACKAGES:

 

-"Dual Pigs".      Two 100lb Pigs roasted, carved, sauced and served, one after the other (usually an hour apart).    Recommended for roughly 150 people***, only if the host serves other apps/sides/salads/desserts & snacks.  More people can be fed if the host provides main courses too.    (Edible yield is roughly 140lbs of pork, not including garnish or rolls.   If this is the only food being served, it may cover approx. 100ppl***).     [If host opts to augment roast with other foods, please serve from a separate area so that guests don't confuse it with EPPO items]..        $2550.00 (plus tax) Includes:

 

    Two 100lb Pig Roasted Onsite (Pig prepped with a dry spice rub).  Served one after the other.  (Edible yield per pig is 65-70lbs). 

    "Fancy Presentation" Including:  Bed of Greens w/Apple in the Mouth, featuring a decorative display of Pineapples, Grapes, Coconuts, Bananas.   (For Your Photo Opportunity).   Most reused for the second pig's presentation.     The fruit is served as a refreshing treat afterward.

    4 Packages of 16 Commercial Rolls ( 64 Martin's Potato Rolls), and 2 packages of "other" (dinner) rolls.

    Served with Our Equipment (Tables, Steamtables, Sternos, Utensils, etc).

    Roast Performed by 3 Staff. 

    Some Pork Served Plain, Some with BBQ sauce, Some with Teriyaki Sauce, and Some with a Mustard Based BBQ Sauce.

    Paper Products/Plasticware/Foil Pans/Plastic Tablecloths are all included.

    Cleanup of the Food Service Area included.

    Roast Performed within 45 minutes driving time of Denville, NJ.

 

AVAILABLE TWEAKS:

-Delete Fancy Presentation:  Subtract $40.00

-Upgrade one pig to 120lb:  Add $100.00

-Add one Case Pork Shoulders:  $120.00/each case

-"100lb Pig Centerpiece/3 Cases Pork Shoulders/12 Whole Chickens/Rolls".     (This is the "Typical Job" from the pricing page, on steroids).   The Pig/Fancy Presentation is the Centerpiece.  The pork shoulders augment the meat from the pig.  The Chickens & Rolls round out the menu.       Recommended for roughly 160 people***, only if the host serves other apps/sides/salads/desserts & snacks.   (Edible yield is roughly 170-180lbs of food, not including garnish or rolls.   If this is the only food being served, it may cover approx. 120ppl***).     [If host opts to augment roast with other foods, please serve from a separate area so that guests don't confuse it with EPPO items]..        $2850.00 (plus tax) Includes:

 

    100lb Pig Roasted Onsite (Pig prepped with a dry spice rub).

    "Fancy Presentation" Including:  Bed of Greens w/Apple in the Mouth, featuring a decorative display of Pineapples, Grapes, Coconuts, Bananas.   (For Your Photo Opportunity).  The fruit is served as a refreshing treat.    

    Twelve Six 3lb. Whole Roasted "Beer Can" Chickens.  (Roughly 36lbs).

    ● 3 Cases Pork Shoulders, sauced and served with the Pork from the Pig. (Roughly 28lbs edible yield per case) .

-"The Big Pig Gig on Steroids (100lb Pig w/Fancy Presentation/3 Cases Pork Shoulders/12 Chickens/3x Salads/Corn/Baked Beans/Watermelon/Chips/Rolls) Recommended for crowds of roughly 160-170ppl people***.   Edible yield is approximately 240lbs of various foods.      This Full Service Catering choice also works out well for casual backyard Weddings, Luau Themed Parties, and Corporate Events, but appeals to those who simply don't want to be bothered with the handling of any of the food.     $3800.00 (plus tax) Includes:

 

    100lb Pig Roasted Onsite (Pig prepped with a dry spice rub). (roughly 65-70lbs edible yeild)

     ● "Fancy Presentation" Including:  Bed of Greens w/Apple in the Mouth, featuring a decorative display of Pineapples, Grapes, Coconuts, Bananas.   (For Your Photo Opportunity).   The fruit is served as a refreshing treat.    

    Twelve 3lb. Whole Roasted "Beer Can" Chickens. (Roughly 36lbs raw, 28 edible yield)

    ● 3 Cases Pork Shoulders, sauced and served with the Pork from the Pig. (33lbs/case raw, Roughly 28lbs edible yield per case).   

    3 Case/Bag of Fresh NJ Corn (~48 ears) Served w/Butter.  (Subject to Seasonal Availability).

    16lbs Each of Deluxe Style Salads (Macaroni Salad, Cole Slaw, Potato Salad) served in an iced salad bar.  (This is NOT the low-end putrid salads that everyone detests).

    7 Large Costco Sized Bags of Brand Name Chips.

    4 Half Trays of Eddie's Special Baked Beans. (approx 7lbs each)

    2 Ice Cold Seedless Watermelon. (Subject to Seasonal Availability).

    8 Packages of Commercial Rolls (mix of Sandwich rolls, and dinner rolls).

    Served with Our Equipment (Tables, Steamtables, Sternos, Utensils, etc).

    "Big Pig Gig On Steroids" Menu (Listed Above)  100lb Pig, 3 cs pork Shoulders, 12 Chickens, Fancy Presentation, Watermelon, 3x Salads, Chips, Corn, Baked Beans, Rolls, Paper, Plastic, etc..

     160 All Beef Hamburgers/Cheeseburgers.

      160 All Beef Thumann or Sabrett Hotdogs.

      Brand Name Condiments & Fixins'  (Ketchup/Mustard/Mayo/Kraut/Lettuce/Tomato/Onion/Pickles).

    A 5th Staffer.

-Package Customization:  What's listed above are packages placed here to expedite your shopping process.   Don't be afraid to request a customized package to suit your needs.     (Pending availability of roaster space) It's usually not a big deal to throw other items into the roaster, such as whole turkeys, more chickens, top rounds of beef, whole salmon, etc.       There's lots of possibilities here, but a few equipment constraints as well.   Please give a call to discuss.    Also, please allow a little extra time to prepare the quote on customized jobs..

[***HEADCOUNT APPROXIMATIONS vs POUNDAGE DISCLAIMER:    We make NO guarantees whatsoever about how many people can be fed from any of our packages.     Estimating how many can be fed is basically a big guess!!!       All headcount serving estimates listed on this page or elsewhere in this website are APPROXIMATIONS, based on experience of running these packages to various sized crowds..       The numbers provided here are "for advice only".   It is the Client's responsibility to order enough food for your guests.       Other Host Provided Foods (appetizers, snacks, sides, desserts, etc.) plays a significant role in how much mileage we can get from the package you select.    The demographics of your crowd influences this greatly too (Frat Boys or Dieters?).    Also, the leanness of the pig can dramatically effect the edible yield, since the fat ends up being discarded.      Sometimes a 100lb pig produces enough food so that leftovers are coming out of our ears, and sometimes the opposite is true.     The pig's leanness is well beyond our control, so it's best to order more than you need.     When selecting packages, please consider the following very rough calculations for food consumption:   The average person can only eat one heaping plate of food per meal.   That plate weighs approximately 1.5 to 1.75lbs..   Doing the math..a party of 65ppl should have approximately 114lbs of food total, a party of 85 should have approximately 123lbs total, and a party of 100 should have approximately 175lbs of food total.    *Very* rough numbers here, but it's in the ballpark.     Also consider that the packages are based on serving for a duration of roughly 1.5 hours of foodservice, the point where people usually have had their fill.    The packages are not designed to provide enough food for continued service well into the wee hours of the morning.  If you really want leftovers for this purpose, order more food!!!.       My point in spelling all this out is to avoid the "worst case scenario" of running out of food too early.    This makes our operation look bad, and embarrasses the host.      The contrary situation isn't much better: Too much food creates unnecessary expenses, wasted energy, and leftover handling issues.   It's never a bad idea to have some rapidly deployable foods in the event that people haven't been satisfied by the EPPO package you selected.      Frozen Burger patties, Hot dogs, Chips, and other long shelf-life snacks can be a good backup solution to the unknowns....(please serve from a separate area)].
