EDDIE'S PORTABLE PIG-OUT:
PIG-ROAST PRICING PAGE
02/07/2010
It's tough to build a stable price guide to include every last factor that influences pricing. This page contains commonly requested packages which pricing, which are also used departure point to build unique quotes. Prices listed here are subject to change without notice! (especially in these turbulent times). Please make sure you scroll all the way down, to see the Pricing Tweaks/Adjustments section at the bottom.
As you've probably seen from the various pictures scattered thru the website, this is a professional operation with a substantial investment in the equipment. I'm optimized for quality, safety, food handling safety, and a wide variety of unusual situations. There *are* cheaper pig roasters out there!! You get what you pay for! If you want it done right, call me! If you want to 'cheap out', then hire "Moe's Pig Roast and Roadkill Removal Service" from East Bumblephuck, NJ, watch him show up..*if* he shows up... with his rusting 250 gallon oil drum that still smells like heating oil... Notice the flies buzzing around the unrefrigerated pig, rolling around in the filthy bed of his 1978 Pickup truck (normally used to haul manure)...and let his blackened transmission-fixing dirty hands handle your meat, and see if you like the taste of his cigar ash in your pork.. Oh, yeah. Some advice: Make sure you have plenty of Toilet paper for the guests, who will be lined up at the John about 4 hours later. That is, if he ever got the thing cooked at all... Be advised that Eddie's Portable Pig Out, LLC is a registered business in NJ, we're fully insured, licensed, and inspected by the DoH.
Generally, there are 4 aspects that combine to influence the final price of your event: Menu, Distance, Onsite Logistics, and Inclement Weather. In-depth discussions about onsite Logistics and Inclement Weather (including images) can be found "here". Included are images of the "footprint" of each package. Lower in the page are distance related charges. At the very bottom of the page is a discussion about headcount approximations as it relates to food poundage, denoted by "***".
The following packages feed up to about 125ppl +/-. Click Here for Pig Roast Packages and options to headcounts of greater than 125ppl.
Pig Roast Packages (All Roasting Done Onsite):
-Roasted Pig Only: We drive the pig roast apparatus to the site of your event 2 hours before roasting time, roast a 100lb pig (approx. 6.5-7.0 hours), and leave it with you. (This should yield approximately 65lbs-70lbs of pork, depending on pig leanness)... This job is performed by a solo pitmaster who will call upon you or a host-provided assistant for onsite pig lifting and moving assistance, both to put the pig "on" early in the day, and to take it "off" when done, and perhaps to erect an EZ-UP canopy. Absolutely no other services, supplies or equipment are included. You're responsible for presenting, carving, saucing, panning and serving to your own equipment. This option is excellent in support of caterers who have clients requesting Pig Roasts, who already have paid food service professionals onhand, but don't have Pig Roasting apparatus. (Package not recommended for the casual "do it yourselfers" because they inevitably make a gigantic mess of things). This is $850.00 (plus tax). Pricing Subject to Adjustments/Tweaks listed below and at the lower portion of this page..
TWEAKS:
-Downgrade to 80lb Pig: Subtract $30.00
-Optional: You can always offer my staffer a nice "tip" to stay with you and help carve using YOUR EQUIPMENT. Recommend $100, and he'll hang out. This is between you and the staffer though.
Full Service Options (All Roasting Done Onsite):
-"The Small Job". (65lb pig, Default Presentation). A commonly requested option is the "entry level" Pig Roast for a small crowd of 45-50 people***. The host is typically faced with the dilemma of wanting a roast, but barely has enough headcount to do it economically. This is a perfect package for them. It's not the fanciest job we can do, but it's everything you need to make it happen economically, with some semblance of professionalism. (Edible yield is roughly 40lbs of pork, so please make sure you have enough other foods to cover your headcount). $1300.00 (plus tax) Includes:
● 65lb Pig Roasted Onsite (Pig prepped with a dry spice rub)
● Pig Presented on Bed of Greens w/Apple in the Mouth. (Default Presentation).
● Served with Our Equipment (Tables, Steamtables, Sternos, Utensils, etc).

Pricing can be further reduced if you're willing to handle the serving table needs (see below). Pricing Subject to Adjustments/Tweaks listed below and at the lower portion of this page.. This choice works out well for Casual Backyard Weddings, Luau Themed Parties, Corporate Events, or any other upscale party, mainly as a nice "centerpiece". No corners are cut. An impressive production that will almost always leave your guests saying "Can you give me that guy's number?!!". Recommended for roughly 75-85 people***, only if the host serves other apps/sides/salads & snacks. (Edible yield is roughly 80lbs of food, not including garnish or rolls. If this is the only food being served, it may cover approx. 50-65ppl***). [If host opts to augment roast with other foods, please serve from a separate area so that guests don't confuse it with EPPO items].. $1475.00 (plus tax) Includes:

-Package Customization: What's listed above are commonly requested packages, placed here to expedite your shopping process. Don't be afraid to request a customized package to suit your needs. (Pending availability of roaster space) It's usually not a big deal to throw other items into the roaster, such as whole turkeys, more chickens, top rounds of beef, whole salmon, etc. To feed larger headcounts, I often augment the roast with a 33lb case of Pork shoulders. To feed even bigger headcounts, I can bring additional roasters too. There's lots of possibilities here, but a few equipment constraints as well. Please give a call to discuss. Also, please allow a little extra time to prepare the quote on customized jobs..
Pricing Adjustments & Tweaks (all of which are subject to tax)
-Food Related Cost Adjustments:
-"For Just a Few Kids" Hot Dog Package: $50.00* For about 8-10 kids, 16 hot dogs will be added to the menu (Usually Thumann, Sabrett, or Nathan's).. Served with squeezable condiments & rolls (No Sauerkraut, Chili or Onion Sauce). Served from a little tailgater grill.
-"For Just a Few Kids" Burger Package: $50.00* For about 8-10 kids, 16 All Beef 6oz Burgers will be added to the menu.. Served with Cheese, squeezable condiments & rolls. Served from a little tailgater grill.
-"For Just a Few Kids" Burger/Dog Package: $75.00* Combines the two above packages.
* I need to point out that to have a serious grill station that's manned throughout your event, I would normally bring on an additional staffer. This package is priced WITHOUT that additional staffer, to keep things economical for the host. What that means is at the height of the pig carving, this service might be shoddy because our hands are full...but usually this suffices if the parents are reasonably flexible. Anything beyond this level of service, and it's gone from a casual "kid's thing", to a grill station that needs to be manned....which due to manpower and equipment ramifications, will force a significant price jump.
-Presentation Options: The Fancy presentation consists of the Bed of greens, Apple in the mouth, 4 Pineapples, several large bunches of Bananas, Grapes, Coconuts, Oranges and is included with "The Typical Job", "The Big Pig Gig", and the "Big Pig Gig Augmented by Grilled Foods". If you decline this option, the "Default" presentation is a Bed of Greens and the Apple in the mouth, which is free of charge.
-Cold Salad Package: A Cold Salad Package consisting of 8lbs each of "Deluxe Style" Cole Slaw, Mac and Potato salad, served in an iced salad bar will be $160.00 additional. To Double the quantity (16lbs each): $240.00.
-Chicken: Six whole (3lb.) Chickens with a dry spice rub, roasted right on beer cans : $50.00. 3 Whole (3lb.) Chickens: $25.00 6 chickens are a good counterpart to a 100lb pigroast.
-Corn/Butter: $55 for a case/bag of 48 ears. But be advised that the addition of corn station can force the need for an additional staffer. (The Pig roast carvers have their hands full). 48 Ears usually does well for about 60-70 people***. Subject to seasonal availability, of course. Good corn usually is available from Mid June to late September. If the corn doesn't look too great, I might opt to substitute Baked Potatoes/Sour Cream/Butter, as a no cost emergency substitution..
-Case of Pork Shoulders*: Five 7-8lb pound pork butts/shoulders. Usually about 33lbs of extra meat, which can accommodate another 20-25 people***. $120.00 Or $25 per Shoulder.
-Top Round of Beef*: Usually 23lbs or so. $110.00
-Whole Roast Farm Raised Salmon*: Usually 15lbs: $120.00
-Whole Roast Turkey*: Usually 19lbs: $70.00
-Rack of Spare Ribs*: $25 per rack.
*Available roaster space dictates what can be added .
-Cold Drink Package: $2.50/head 2L bottles of Brand Name Regular and Diet sodas in an iced cooler. Also an Array of Brand Name Jugs of Juices. Served with Big 16oz Costco Sized cups, some small 8oz cups, a cooler of fresh ice, and bottled water. Serve yourself style. Note: You get far more "bang for the buck" if you handle the beverages yourself, because we don't leave coolers or unopened/unused beverages behind. If your party goes on well into the night, please consider this.
-Host-provided serving tables & expendables (Typical Job, 85ppl): If you handle all of the serving table needs (3-5 full sized banquet tables, tablecloths, 5 steamtables, sternos, foil pans, paper products, plasticware, serving utensils)...I consider that to be roughly $40.00 that I'd be willing to shave off the price.. Or, if you want to handle the paper products only, I can give a little rebate. I VERY MUCH prefer you to handle the serving table needs, as it expedites my departure without leaving a glaring void in your party, and allows you to have specific "themed decor". The caveat to this is, food safety. No kidding around, the steamtables have to meet or exceed my standards. Please Click "servingtable.htm" for details on what I expect if you select this option. Please click on "steamtable.htm" for detailed direction on the use of Steamtables.. (Note; For "Big Pig Gig", you will need 5 serving tables/tablecloths, 8 steamtables/sternos).
TWEAKS:
-You Provide Paper/Plastic products only, party of 50: Subtract $20.00
-You Provide Paper/Plastic products only, party of 80: Subtract $25.00
-You Provide Paper/Plastic products only, party of 100: Subtract $30.00
-You Provide Paper/Plastic products only, party of 125: Subtract $40.00
-Meatfest Substitutions: I've run into this several times. A client plans for a pig roast, but did not anticipate the level of offense that some of the guests might have. A month later, a phone call comes in "What can we do instead?". Here are just two potential "no-cost" substitutions:
-100lb Pig = 2 Cases of Pork Shoulders (approx 65lbs), 1 Top Round of Beef (23lbs). 6 Chickens (18lbs) already included. Garnish Fruit Simply served instead of "presented". You actually get more edible yield out of this than for a Pig Roast.
-100lb Pig = 1 Case of Pork Shoulders (approx 32lbs), 2 Whole Roast Turkeys (35lbs), 1 Top Round of Beef (23lbs). 6 Chickens (18lbs) already included. Garnish Fruit Simply served instead of "presented".
(These are not the only options since we can work in other meats, such as Whole Roast Salmon/Fish, Racks of Ribs, Lamb, etc. I might need to make a phone call or two to determine market costs of anything special). I should mention that it's a trick to get all meats cooked so that they're presented all at once. Sometimes items might need another half hour or so to finish, despite my best planning efforts. Meatfests=Patience.
-Logistics Related Cost Adjustments:
-Additional Driving Time/Distance (Beyond the included 45 Minutes Driving Time from Denville) is taken on a case by case basis. Influential factors: Extra gas, current cost of gas, the number of vehicles required to get all crew/equipment to the job, tolls, and the number of crew versus their hourly rates...and aggravation (ex. NYC, SI, or Long Island)! For Standard Pig Roasts featuring 2/3 crew, here's some rough figures: (Oh, by the way, we don't drive 80MPH with a 6,000lb trailer).
-No Additional Mileage Charges Apply: Jobs within 45 Minutes Driving Distance to Denville, such as Rockaway, Dover, Somerville, Newark, Paramus, Paterson, Englewood, Ringwood.
-$150.00 Extra: Jobs in the areas of: High Bridge, Branchburg, Belvidere, Edison, Wantage, New Brunswick, Perth Amboy, Suffern NY, Stroudsburg PA, Dingman's Ferry PA,
-$175.00 Extra: Jobs in the areas of: North Brunswick, Sayreville, Flemington, South Brunswick, Princeton, Red Bank, Staten Island NY, White Plains NY, Newburgh NY, Easton PA, Nazareth PA.
-$200.00 Extra: Jobs in the areas of: Atlantic Highlands, Freehold, Long Branch, Trenton, Jackson, Peekskill NY, Bethlehem PA.
-$250.00 Extra: Jobs in the areas of: Lakewood, Pt. Pleasant, Tom's River, Cherry Hill, Hempstead/Freeport (LI,NY), Kingston NY, Stamford/Norwalk/Bridgeport CT, Allentown PA, Wilkes Barre PA.
-$300.00 Extra**: Jobs in the areas of: Camden, Atlantic City, Long Beach Island, West Hampton, LI, NY, New Haven, CT, Philadelphia PA, Reading PA, New York City.
-$400.00 Extra**: Jobs in the areas of: Wildwood/Cape May, East Hampton, LI, NY, Hartford, CT
(** = Overnight accommodations may be necessary).
-Unusual Logistics This is tough to explain, but I'll try: All pricing is based on services being done in very close proximity to the gate of the truck/trailer. Examples of "Unusual Logistics" are when we're required to Hand Carry all Equipment up staircases, thru a fence, to the backyard, to a pool deck, etc. Or "Splitting the Serving Area from the Roasting Area" where the roaster/trailer remains in the driveway, but the serving/carving happens several hundred feet away (or even a vehicle trip away!). Another common one: When we have to drop off and roll gear into a picnic grove, but must "hide" the truck/trailer elsewhere. The actual costs of Unusual Logistics differs based on the event's unique characteristics.. Unusual Logistics typically requires an additional crew member or two, earlier arrivals of crew, or at the very least, a higher payment to crew members. Charges vary based on the situation, but it's at least $200 for one extra crew member...$400 for a second extra crew member. Site Survey may have to be done, which I now charge $25 minimum for. A more detailed discussion with pics can be found Here.
-Site Survey: Normally digital images sent thru email are all I need to understand your layout. If pictures/emails/discussions don't bring me to the level of comfort I need to do your job, then I may have to perform a site survey. $25.00 will cover my time and gas to your location, within an hour from my house. More, if farther.
-Additional Crew Member: Assistants are getting around $200/day, some get as much as $300/day, depending on talent/experience, the length of the day, and transportation costs..
-Extra serving time: (Beyond the typical 1.5 hours of serving time): $100/hour
-'Serving time before 3pm' penalty: Starting at $150 The target serving time for a 100lb pig is anywhere from 3pm-6pm. This allows a tolerable 6am departure from my home. But when we're talking about a 2am departure, it's a whole other nightmare. I have to bribe my assistants on these early jobs.
-'Unusually Early Start/Unusually Late End' penalty: Starting at $150 This is a close cousin to the above, and is taken on a case by case basis. In effect, you're going to be charged extra for jobs that force departures before 6am, or brings us home after 11pm. I have to bribe my assistants well for these unusually disruptive jobs. In some cases, "Additional Driving Time" charges listed above may have already covered some of this.
-Holiday Pay Adjustment: I have an unusually hard time staffing events on Memorial Day weekend, July 4th Weekend, and Labor Day weekend. Everyone has a life, myself included. I'm browbeaten into giving higher salaries than usual, to the tune of $50 per crew member. A 2 person Crew $100. A 3 person crew: $150. A 4 person crew: $200.00.
-An Eddie "Day Off" Adjustment: Much like you, I have a full time job with only so much vacation leave. If I take a weekday job, forcing me to take vacation time: $200.00. Ask yourself how much one of *YOUR* vacation days worth to you, and now you'll understand why I list this.
-Last Minute Hiring Penalty: There will be an additional surcharge of $200-400.00 if you hire me within 4 days of the event. This is because you’ll force me to break plans, have assistants break plans, force me to pay premiums and “bribes” to make things happen at the last minute, force me to endure the stress you place on me, and very often, force me to take on financial risk because contracts have not been placed, and checks have not properly cleared. Avoid this charge: Plan ahead!
-Additional Guests/Increased Headcount: If a few extra people show up to the roast, don't worry about it. Once I'm onsite, I don't count people. Everything's bought before I get there anyway. Aside from a few extra plates, it really has no significant financial impact to me. However, if you anticipate significant extra people, let me know as early as possible, and I can bump up the poundage (with an associated price adjustment for the extra pork).
-Off-Season, Cold Weather: $250.00 This is a battle-charge. All the equipment is winterized, and must be un-winterized. Plastic tubs crack, hoses freeze, lighting equipment has to come out. Rain adds an extra level of annoyance in the cold weather. Not to mention we end up sick half the time. But the main difficulty is we're not psyched to do these jobs. But the battle-charge helps to change that.
-Inclement Weather Related Charges:
-10'x10' Z-UP Canopy over roaster: Free of Charge
-10'x10' EZ-UP Canopies: $70.00 each. 3 needed for "Small/Typical Jobs". 4 needed for "Big Pig Gig".
-20'x20' Frame Canopy: $300.00. Used for the 'Big Pig Gig Augmented by Burgers/Dogs" only.
-Additional Crew Member: See above. If rain plan forces unusual logistics, then additional paid help will be called in.
-Additional Vehicles/Round Trips: Taken on a case-by-case basis.
-Rain Coverage Flat Fee (Only available during contracting stages): $300.00
-Military Discount
If your party is in celebration of the return of a US Serviceman, please tell me! I'd either apply a discount, or a "plus-up" of some sort. TBD.
Hopefully this has given you a little insight into my pricing. This is meant to be a ballpark estimate only, a departure point for all pricing. I'll be happy to "sharpen the pencil" based on your unique situation. Sometimes, certain combos can lead to efficiencies that ultimately lower costs. Sometimes, certain combos are tough to achieve due to the equipment set rolling to your event. Please call me directly to discuss! 973 627-2722. You'll probably have to leave a message, so please be sure to leave your name, a phone number, headcount, desired date(s), location of event, and nature of your event.
[***HEADCOUNT APPROXIMATIONS vs POUNDAGE: We make NO guarantees whatsoever about how many people can be fed from any of our packages. Estimating how many can be fed is basically a big guess!!! All headcount serving estimates listed on this page or elsewhere in this website are APPROXIMATIONS, based on years of experience of running these packages to various sized crowds.. The numbers provided here are "for advice only". It is the Client's responsibility to order enough food for your guests. Other Host Provided Foods (appetizers, snacks, sides, desserts, etc.) plays a significant role in how much mileage we can get from the package you select. The demographics of your crowd influences this greatly too (Frat Boys or Dieters?). Also, the leanness of the pig can dramatically effect the edible yield, since the fat ends up being discarded. Sometimes a 100lb pig produces enough food so that leftovers are coming out of our ears, and sometimes the opposite is true. The pig's leanness is well beyond our control, so it's best to order more than you need. When selecting packages, please consider the following very rough calculations for food consumption: The average person can only eat one heaping plate of food per meal. That plate weighs approximately 1 3/4lbs.. Doing the math..a party of 65ppl should have approximately 114lbs of food total, a party of 85 should have approximately 123lbs total, and a party of 100 should have approximately 175lbs of food total. *Very* rough numbers here, but it's in the ballpark. Also consider that the packages are based on serving for a duration of roughly 1.5 hours of foodservice, the point where people usually have had their fill. The packages are not designed to provide enough food for continued service well into the wee hours of the morning. If you really want leftovers for this purpose, order more food!!!. My point in spelling all this out is to avoid the "worst case scenario" of running out of food too early. This makes our operation look bad, and embarrasses the host. The contrary situation isn't much better: Too much food creates unnecessary expenses, wasted energy, and leftover handling issues. It's never a bad idea to have some rapidly deployable foods in the event that people haven't been satisfied by the EPPO package you selected. Frozen Burger patties, Hot dogs, Chips, and other long shelf-life snacks can be a good backup solution to the unknowns....(please serve from a separate area)].
Thanks!
Eddie Z
