EDDIE'S PORTABLE PIG-OUT: PICS OF THE BBQ/TAILGATE/BACKYARD PARTY OPERATION

A Front view of my older pickup truck...with the 16' BBQ trailer. This is
where it started. Note the
snow on the ground... just shows that sunny 70 degree weather is not required to
operate :-) For those of you
seriously considering my services, I've created an entire page relating to what

The trailer no longer looks like this inside. The trailer has been completely
retrofitted inside with new, more professional gear supportive of larger
headcounts. It's also been standardized to have a similar look
and feel to my other three trailers. (This ultimately enhances crew's
efficiency from job to job). Please click over to the

I have a fully operational stereo in the 16' trailer. Not the greatest system in the world, mind you...but it does work,
once in a while.. A single CD player, a tape deck, a receiver that works 95% of the time....and two sets of speakers, one permanently mounted inside, and one remote set that I hang on (either side) of the trailer's exterior.
I even added a cord making this Ipod/MP3 player compatible.
(If you need serious sound reinforcement, this ain't it...you have to hire a DJ
with professional equipment). Also note the crap that I carry: Extra Extension Cords, Flagpole, all sorts of tape, odds and ends... Lighting.

Here's the 20' x 20' internal frame party canopy, which is kept aboard the 16'
trailer. Shown here being put to the test at my own house party in
the rain. The clear wind walls are not shown.

of the new grills aboard the 16' cargo trailer. This is the charcoal one.
The legs unscrew for efficient storage.

grill aboard the 16' trailer. A Commercial Propane grill.
I have 2 more of these in storage.
This is the roaster
now situated in the 16' trailer. (I own four similar roasters now). Professional quality, Stainless Steel grates and additional grill
racks (not shown here).... typically used for 100-110lb pigs or
smaller)... Also can be used as a massive oven, capable of
handling Ribs, Chickens, Turkeys, Top Rounds of Beef, Baked Potatoes, Whole
Fish, Venison Roasts, Lamb Roasts, etc, etc. It can also be
used to heat trays. Check out the

Here's the iced up salad bar. A huge
multi-layered salad, dressings on the side, served with croutons. Also a huge veggie tray with dips on the right.
Drinks are served "serve yourself style". Not pretty, but functional. The Brand Name Soda is in 2L bottles, on ice, with a good array of
Brand Name Diet & Regular sodas. A cooler full of ice with a serving scoop. A Stack of Cups. A Bottomless jug of ice water
(or bottled water, if desired). Some Juices.
Here's a real nice shot of the Ayers kitchen area. We set under an awning, so
the rain was no problem. With this Equipment, we could've easily handled 150
people. Lighting allowed for Night Operations.
Here's a gig up at
the New York State Renaissance festival for a company picnic. Picture
taken just before the start of the picnic. (Typically, I'm too busy to get good pics

Here's the serving
area for a small wedding up at
the New York State Renaissance festival a handful of years ago This was a drizzly day,
hence the pair of EZ-UP canopies. This shot and the one above depict
the level of fanciness you can typically expect. Functional and Cost
effective, but far from "white glove"..
This is
the footprint you can expect for the "The Big Pig Gig with Grilled Foods".
Five 6 foot tables in the front. One table parallel and behind where
the pig gets served to. The width of the spread is about 10' (the size of
the 10x10 canopy), the Length of the line is about 30 feet.
The client should provide the equivalent of three 10'x10" EZ-UP Canopies in the
event of rain. In this case, and EZ-Up was erected just for
protection from the sun. The Various "Super Deluxe Picnics"
would have a similar footprint, minus the Roaster. This picture was
taken while standing on the gate of my 16' trailer.
