Typically, I draw upon the following equipment to support events:

The 2007 K2500 8' Bed, Crew Cab, 4WD Chevrolet Pickup for Towing.   

 

█ The 2003 FORD E-350 7.3L TURBO DIESEL CARGO VAN.   (New to the operation as of 7/09).   Relying on my crew for the use of their pickup trucks had gotten old.  This Van intended to allow concurrent catering jobs to happen with more frequency (professionalism, and safety).    Sorry, not a shiny brand new truck.   But not totally embarrassing either..

 

The periodic use of staffer's SUV's and Towing Vehicles.

 

Currently, Four Trailers support the works.  Each Trailer has a specific purpose for the operation.

 

The 16' Cargo Trailer (Pig Roast/Grilling/'Go Large' Platform, which we call "BBQ").    With a generic set of tie-downs, this unit was purposely configured to be diverse.   The default equipment aboard includes a Roaster, a huge commercial propane grill, a huge commercial charcoal grill, and 4 King Cooker stations.   This means that it will support PIG ROASTS *AND* GRILLING events, which have been logistically difficult to do before.    With a simple reconfiguration, the pig roast/pig roast support gear can be removed, and one additional large propane grill can be placed...to support large headcount grilled events.   This is the "Headcount Multiplier" unit which I refer to as "Going Large".   (For more on large headcount events, please click Here).   Here's the primary equipment aboard;

 

    "Big John" Commercial Propane Grill 1 Aboard the trailer by default (1 more in storage, available for Very Large Headcount events.)
    "Big John" Commercial Charcoal Grill   1 Aboard the trailer by default.
    Pig Roaster #3    Aboard the trailer by default.  

    Meeting FlagPole To Find The Party in Large Parking Lots.
    Communications Center:  WhiteBoard/CorkBoard, useful for sustained events where people are trying to meet. 


█  The 14' Cargo Trailer (Pig Roast Platform which we call "Pig A").   (Newly painted as of 9/2010!)    It contains *everything* to support a Pig Roast professionally, including the longest of the three pig roasters, 3 EZ-Up Canopies, tables, serving & carving apparatus, king cookers, garbage cans, sink...    This allows sides, salads, and "full service" roasts to happen. 

 

The 16' & 14' Cargo Trailers both contain:   

    Crappy Stereo System onboard both trailers (small speakers can be placed on either side of trailer), including 5 disc CD player, and an IPOD connection.
    Tools and various other handy odds and ends, to get us thru the event.
    Serving Tables  Fold up banquet tables, usually 6 per trailer.    Table skirting, when appropriate.
    Serving Equipment & Utensils & Full array of Cooking Utensils. 

    Portable Dishwashing Apparatus...(For the colder weather roasts, a Coleman Hot Water heater is added).   125' of Culinary grade RV hose to support.

    Several 33 Gallon Garbage Cans to support foodservice area.

    Hundreds of feet of Electrical cord to support operations, with all sorts of splitters, connectors, etc. 

    Scene Lighting for Nightime Operations (From 'Mellow colored rope lights', to 'Clip on Spots', to 'dual-head scene halogen floodlights', etc). 

    Portable Salad Bar  one per trailer.
    Sterno Powered Cheapo Steam Tables  The Non-fancy Wire Ones, too many to count.

 

The 6' x 10' Cargo Trailer  (Pig Roast Platform, which we call "Pig B").   New as of 9/05.    This cargo trailer is specifically configured for our "B Team" to support "The Small Job" and "The Typical Job" when the primary unit is already out on a full service job (with Eddie).   This contains Pig Roaster #2, some tables, some garbage cans, 2 10x10 EZ-Up canopies, and a somewhat minimum set of support gear to professionally accomplish the mission.     The Trailer is now intended to be towed with the 2003 Ford E-350 Cargo Van (instead of borrowed staffer's trucks, as we had done before).      For More Detailed Info on the B Unit, Please click here.

 

The 5' x 8' Cargo Trailer  (Pig Roast Platform, which we call "Pig C").   New as of 7/09.    This cargo trailer was bought specifically because it was used, cheap, weathered, with the expectation that *somebody's* gonna ding it up!!  (It'll likely be towed by the least experience towers).   It will carry the oldest of my roasters.       This trailer has multiple roles:    It's intended to support "Pig Only" jobs, where the client or other caterer hires us to roast them a pig onsite, but is willing to handle all the presentation, carving, serving and cleanup aspects themselves.     The Trailer really contains a very minimal set of gear:  Roaster, 1 table, ash bucket, scraper, shovel, some roaster cleanup support tools, and some consumables (Charcoal, foil, lighter fluid, etc)..   And maybe a few other yard sale finds, downgraded gear, and odds and ends.     The unit was purposely made light and sleek so a staffer can tow it with a small sized truck.      This will also be the most efficient way to get another roaster onsite, for auxiliary roaster space.    And yes, this might be the trailer that rolls when I'm talked into loaning out a roaster.   
   

The Pig Roasters:  4 total.  All situated inside the various cargo trailers discussed above.  A closer look:

    -Pig Roaster #1 (The Longest unit, 2' longer than the others pictured) lives aboard my 14' Pig Roast Support Trailer (Pig A).   This roaster can also be towed by itself.     With a simple charcoal rack conversion, this Roaster can be used as a massive standard grill for Burgers/Dogs/etc..    

    -Pig Roaster #2 now resides in the 6'x10' "Pig B" cargo trailer, supporting "B" roasts.   This is also a towable roaster.    

    -Pig Roaster #3 is the same cooking chamber as Pig Roaster #2, but is NOT towable.    More like a big Wheelbarrow.      The four roasters can combine to support foodservice for 650 people, or more(?).   This roaster lives aboard the 16' "BBQ" cargo trailer.

-Stainless Steel Rib Rack(s), (full and half racks) are used in conjunction with the pig roaster(s) to augment grill space.

    -Pig Roaster #4 is the exact same unit as Pig Roaster #3    (New as of 7/09)    This roaster lives aboard the 5'x8' "Pig C" cargo trailer.

-Stainless Steel Rib Rack(s), (full and half racks) are used in conjunction with the pig roaster(s) to augment grill space.

 

 

General Purpose Equipment (Drawn upon as needed):

-Array of King Cookers    Several single-stand, one tall, one short.   Two more shortie ones.  (Corn pots or Simple Deep fryers).  2 taller double-burner units (Corn, Sauces).
-A Portable Husky Power Battery Unit.   Sometimes perfect just to give the trailers light for load out, without having to mess with the big noisy generator.
-Nine 10' x 10' EZ-UP/CARAVAN White Canopies, usually used to cover the food tables.    Several of these have 4 white zippered wind-walls.   By default, 3 of my nicest ones are aboard the 14' Pig Roast Cargo Trailer.   2 Aboard the "B Unit" trailer. 

-Large Coolers/Ice  I have 8 very large coolers of the 100-150qt range.  And a ton of smaller ones.

-320 Quart SSI Marine Cooler.   I own two.  Mainly used to transport whole pigs safely.

-400lb/day Manitowac Commercial Ice Machine back at home.   

-Drink Coolers  2 larger Yellow Igloo drink dispensers. (5 Gallon), one small 2.5 gallon water dispenser.

-20 x 20 Professional Internal Frame Canopy.   I will rent this to you even at the last minute to salvage your washout of an event, for $300.00.
