What really is the protocol for such a statement? Not sure. But here's some Milestones:
Well, in the Summer of 1982, I performed my first ever catering job for a handful of my Sig Ep Frat Brothers at a band blast party.. I made Fried Chicken.
In the fall of 1985, I started "The Official Tailgate Club (OTC) "as a means to continue hardcore partying with my graduate Sig Ep Fraternity brothers. I was preparing tailgate parties for all of the home Rutger's football games, doing mainly grilled menus. The first time I was doing "mobile foodservice" for a group.
In 1988, the words "Eddie's Portable Pig Out" were first uttered in the same sentence. By then, I was taking money in exchange for catering services, usually to friends. Mostly grilled menus, and some standard catering tray menus (meatballs, ziti, lasagna, salads, etc). The OTC was petering out.
In June of 2000, I performed my first Pig Roast on rented gear, for a coworker's daughter's Graduation party.
Shortly thereafter, in March 2001, I purchased my first Pig Roaster. The name "Eddie's Portable Pig Out" took on a new meaning as pig roasts started to become "my thing".
In April 2008, I became "Eddie's Portable Pig Out, LLC"
